Easy Gooey Cupcake Filling Hack

Don’t get me wrong — I love to bake. I will be the first to tell you that the kitchen is my favorite room in the house, from-scratch chocolate chip cookies are the ultimate and watching flour explode from the Kitchenaid when I’m moving too quickly is actually kind of awesome. But, I really don’t have time for it.

Schedules don’t always allow for Pinterest perfect cookies, meticulously frosted cakes or obsessively placed perils. So, when I find the opportunity to take a fast and typical recipe over the top with two simple steps — I jump on it. Out of my own extreme laziness lack of time for over the top enhancements, I give you my very easy gooey cupcake filling hack. You’re welcome in advance.

Step one: choose a flavor. Step two: fill your cupcakes.

It’s exactly that easy! Thanks to the newly discovered Sweet Kiss Brigadeiro spread, my recent cupcake filling experiment was a huge hit. Now, I can hack even a basic box cake mix into a delicious custom recipe that tastes like it came straight out of a shop.

The brigadeiro spread is currently available in two flavors: milk chocolate (made with real Belgium chocolate!) and coconut. Pick your spread, then consider the cake and frosting flavors that would best pair with it to create a truly artisanal-ish cupcake in your own kitchen. Here, I made you a chart of ideas:

I kept it simple and ran with a white cake and buttercream. But — holy moly — add in that coconut filling and you have a showstopper. Having watched too many episodes of Cupcake Wars, I decided I could totally pull this off using their basic tips.

  1. Bake your cakes and allow to cool.
  2. Using a spoon, carve a small 1-inch hole in the top of the cake. This could easily be done with the melon baller for much more consistent holes. Oh, and you should probably eat that spare cake.
  3. The super easy filling part 1: heat the brigadeiro spread for a few seconds in the microwave. About 30 seems to be a good place to start. Sixty is too many — as my brigadeiro goo-covered jar proves.
  4. The super easy filling part 2: spoon a glob of spread into the center of the cake. I let mine heap at little on the top to make sure their was plenty! Allow a few more minutes to cool.
  5. Top with a swipe of your favorite frosting, sprinkles and more!

As you can see in this half slice — the brigadeiro filling melds with the cake to create an ooey gooey center that is sure to please any sweet tooth. It’s a decadent addition to every bite and will have everyone wondering when you got so very skilled at cupcakery. Again, you’re welcome.
